Retire do fogo, escorra a água, coloque a abóbora em um prato fundo, amasse com um garfo, meça 1 xícara das de chá e reserve.&lt;/li&gt;&lt;li&gt;Descasque a cebola, elimine as extremidades e pique em pedaços bem pequenos. Lave as ervas (salsinha, cebolinha-verde e hortelã), seque com toalha de papel, separe somente as folhas, pique-as finamente, meça 1 xícara das de chá.&lt;/li&gt;&lt;li&gt;Esprema o excesso de água de trigo e coloque em uma tigela. Junte a abóbora, a cebola, as ervas frescas, o ovo, o azeite de oliva, a de pimenta-síria e o sal. Misture bem com uma colher ou com as mãos por 2 minutos ou até obter uma massa homogênea. Reserve.&lt;/li&gt;&lt;li&gt;Recheio:&lt;/li&gt;&lt;li&gt;Lave a rúcula, elimine os talos mais duros, pique as folhas finamente e reserve. Amasse a ricota, meça 1 xícara das de chá e reserve.&lt;/li&gt;&lt;li&gt;Descasque a cebola, elimine as extremidades, pique em pedaços bem pequenos.&lt;/li&gt;&lt;li&gt;Coloque em uma panela pequena a cebola e a metade do azeite de oliva. Leve ao fogo e refogue, mexendo de vez em quando, por 3 minutos ou até a cebola ficar macia. Retire do fogo. Junte a rúcula, a ricota, as uvas-passa, o orégano, o sal e a pimenta-do-reino. Misture bem com uma colher até ficar homogêneo.&lt;/li&gt;&lt;li&gt;Com o restante do azeite de oliva do recheio unte uma assadeira (23 cm x 23 cm), forre o fundo com a metade da massa, espalhe o recheio e cubra com a massa restante. Corte o quibe em 10 pedaços. Leve ao forno por 20 minutos.
